Great Wholesome Holiday Meals For the Family

1. Smoked Turkey Breast with Collard Greens: Ingredients include: 1.5 pounds collard greens, pound smoked turkey breast, cup chicken broth, minced onion, tsp. red pepper flakes, tsp. minced celery, and tsp. ground black pepper. Place the cut up pieces of collard greens and turkey in a pot. Cover them with water and cook on medium heat, covered, for 20 minutes. Add the onion, celery, red pepper flakes, chicken broth, onion, red pepper flakes, and black pepper, and cook on medium heat for approximately an hour.

2. Peppercorn Honey Mustard Pork Roast: Ingredients include: 1- pound pork loin roast, 1 orange, a 12-oz package of cranberries, 1/4 cup honey, 2 tbsp. honey mustard, 2 tbsp. crushed peppercorns, 1/2 tsp. 1 tsp. minced thyme, and 1/2 tsp. salt. Chop up orange and cranberries. Place in saucepan and blend in honey. Bring to a boil over medium-high heat and cook 3 to 4 minutes. Cool. Place the pork around the roast in a roast cooking pot. Mix the honey mixture and other ingredients in a bowl. Baste the roast and pork with the sauce. Cook at 325 degrees for 30 minutes. Remove and baste the meat. Cook for another 20 minutes. Let it sit for about 15 minutes and then serve.

3. Honey Mustard Glazed Turkey: Ingredients include: 5 pound turkey breast , 1/4 cup apricot preserves, 1 tbsp. honey-style mustard. Place turkey breast in roast pan. Bake for 2 hours at 325 degrees. In a bowl, blend the mustard and apricot preserves. Baste the glaze over the turkey breast and cook for another 20 min. Remove and serve.

4. Rib Eye Roast with Gravy, Potatoes, and Mushrooms: 1 tbsp minced rosemary, 2 minced garlic gloves, 2 tsp salt, 1 tsp ground black pepper, one 4-pound rib eye roast, 4 pounds small potatoes (cut in small portions), 1 tbsp vegetable oil, 1 pound chopped white mushrooms, 1 tbsp butter, 1 tbsp all-purpose flour, 1 can beef broth, and 1 tbsp tomato paste. In a bowl, mix rosemary, garlic, and salt and pepper. Baste the roast. Cook for 40 minutes at 350F (175C). Add potatoes to the roast pan. Cook for another 20 minutes. Put mushrooms in the roast pan, swirl, and cook for another 40 minutes. Mix butter and flour together in a bowl. Remove roast and vegetables from oven. Remove food from the pan. Add beef broth to the pan juices, boil, and cook for 2 minutes. Reduce the heat and mix in flour mixture and tomato paste, and blend. Pour the gravy in a bowl. Slice beef and serve with gravy, potatoes and gravy.

Banana Bread Recipe

Tasty, healthy and simple to make, banana bread is a hit with families, especially children. Banana bread can be served as a desert, a breakfast food or a great snack for sending with the children to school. Using bananas that are overripe is a great way to stretch your food dollars. Let’s make banana bread.

Collect the Ingredients

Collect everything you will need to make the bread. This will include 1/3 cup of shortening, 1/2 teaspoon of salt, 2/3 cup sugar, 2 teaspoons of baking powder, 1 3/4 cups of flour, a little extra flour, 2 bananas, mashed well and some butter or cooking spray for preparing the pan.

Making the Bread

Start by pre-heating the oven to 350 degrees. Grease the pan well and add the extra flour, dusting it around the whole pan so that your banana bread will come out very easily. Take the mashed banana and mix it with the flour, baking soda, salt, baking powder and sugar in a regular sized bowl.

Next put in your butter and mix all the ingredients together until this mixture looks like crumbs. The next step is to add two eggs. Mix this well and put in the pan you have prepared. Bake the bread at 350. This will take about 30 or 40 minutes to bake until it is done. Check the bread by pushing a toothpick into the center of the bread and when it comes out clean the bread is done.

Final Tips

Use the proper size pan and it will make this process much simpler. A 4 x 8 inch deep pan is perfect. The oven should not be opened a lot since this will increase the amount of time the bread will have to bake. Every time you open the door, heat escapes and reduces the temperature in the oven.

When choosing the bananas to use, the overripe banana will work much better. When the peel has many brown spots, the banana will be sweeter than regular ripe bananas. When your bread appears to be browning before the middle is done, you can use aluminum foil to cover it. This will allow the bread to get done without over-browning the top. If you have more bananas you need to use, make several loaves at the same time and freeze the extras to keep them fresh. Do not forget to use oven mitts when removing the bread from the oven or you will burn your hands.

Making Chocolate Banana Bread

If you want to make chocolate banana bread, this can be done by adding 1 teaspoon of vanilla extract, icing sugar and a cup of dark chocolate chips. While you are mixing the flour and baking powder together, add your icing sugar. Use a double boiler to melt the chocolate chips as well as the butter. Use the icing sugar to dust over the loaf when it is done. Bake the bread for about an hour. Allow this to cool down for about 40 or 50 minutes.

I know that just about everyone has some kind of favorite food they love to eat! Some people like pizza. Some like mashed potatoes with grilled chicken. Others like hamburgers. My grandmother’s recipe for chicken pot pie happens to be the very best food I have ever eaten.

My mother had come up with some delicious cookies one Easter. She made some chocolate batter that she was going to use for cookies. I had suggested to her that she put my favorite food in it, peanut butter. Momma smiled at me and put the peanut butter in.

Once it cooled, granny would remove the meat, skim off the fat and set the liquid aside. Then, in a deep dish roasting pan, she added chopped carrots, peas, corn, green beans, celery. She would cover this with the liquid which she saved. Then she placed this in her preheated oven for about fifteen minutes. She baked it at about three hundred seventy-five degrees.

My grandmother got the roasting pan out and then would add her mouth-watering buttermilk biscuits to the top of the pan. She covered everything completely. I was drooling with anticipation.

Once the biscuit concoction was finished, she pulled out the pan and the smell was glorious! I could not wait to sit down to the beautiful creation! The chicken was delicious, and each mouthful of vegetables left me wanting even more. It was creamy, fluffy and smooth!

Punches were exchanged, words were shouted, and feelings were terribly hurt. Take it from me, always be sure people know your intentions. Date one person at a time and save your integrity. Do not be greedy. You will fair better in the end. And so will they.

Dal Makhani – Lentils in a Creamy Gravy

Dal Makhani is a very popular Indian dish made from lentils and beans in a creamy butter sauce. This can be made with a variety of dals and is an integral part of Indian cuisine.

Ingredients

1/2 cup urad dal (Whole black lentils), 2 tbsp rajma (Kidney beans), 2 medium sized onions finely chopped, 1 tsp ginger paste, 1 tsp garlic paste, Pulp of 3 medium sized fresh tomatoes, 2 green chillies slit, 1/4 tsp haldi powder (Turmeric powder), 1/2 tsp jeera (Cumin seeds), 1 tsp chilli powder (Chilli powder), 2 tsp dhania powder (Coriander powder), 1/2 tsp garam masala, 1-2 tbsp oil, 1/2 cup cream, Salt to taste, Fresh coriander leaves chopped (Cilantro) and 1-2 tbsp butter for garnish

Method

1. Clean, wash and soak the whole urad and rajma overnight separately. Drain and keep aside.

2. Combine the dals and beans and add 2 cups of water with little salt (as per taste) and pressure cook till the dals are overcooked. Whisk well till the dal is almost mashed.

3. Heat the oil in a non-stick pan and add cumin seeds. When the cumin seeds crackle, add the slit green chillies, chopped onions, ginger paste and garlic paste. Fry the onion till golden brown over a medium flame.

4. Then add turmeric powder, chilli powder and coriander powder and stir for 5 mins.

5. Add tomato pulp and stir till the oil separates.

6. Add the cooked dal and 3/4 – 1 cup of water and salt (as per taste) simmer it for 15 mins till it becomes little thick.

7. Add the garam masala and stir.

8. Add the cream to the gravy and mix gently.

9. Garnish with the chopped cilantro and butter.

10. Serve with steamed basmati rice or rotis.
